Overview
The 1993 Jasper Hill Georgia's Paddock Shiraz is a mature old-vintage Heathcote Shiraz from one of Victoria's pioneering estates. Georgia's Paddock is one of Jasper Hill's defining wines, grown on ancient Cambrian soils and known for concentration, spice, earthy depth and long ageing ability.
The original block of Georgia's Paddock Shiraz was planted in 1975, with additional vines planted in 1987. Ten hectares of low-yielding Shiraz make this the largest production wine at Jasper Hill, while still retaining the estate's hallmark intensity and regional character.
Vintage & Winemaking
The 1993 release was described at the time as another classic example of Georgia's Paddock from a strong Heathcote year. The vines were grown under fully organic conditions, with no artificial chemicals used.
The wine was fully destemmed, fermented with natural yeasts and kept on skins for five to six weeks before gentle pressing. It was then matured in French oak for 12 months.

Deep colour, with dark chocolate, menthol and graphite notes. Concentrated, peppery and tannic, finishing long and savoury.
Tasting Notes
Colour: Deep crimson in youth, now expected to show mature crimson and garnet development.
Nose: Developed redcurrant, sage, walnut, liquorice, earth, blackberry leaf, menthol and cracked pepper.
Palate: Supple and inky, with earthy blackberry, leather, eucalypt, mint, walnut and graphite tobacco notes. Firm tannins and savoury structure carry a tight, mature finish.
Food Pairing
Pair with roast beef, lamb shoulder, venison, slow-braised short ribs, mushroom dishes or aged hard cheeses.
Cellaring Potential
This is a mature old-vintage bottle. Best enjoyed now, with bottle condition, provenance and storage history especially important at this age.
