Overview

The 1998 Penfolds Bin 707 Cabernet Sauvignon is a mature release of one of Australia’s benchmark Cabernet wines. Inspired by the Boeing 707 jet that helped take Penfolds to the world, Bin 707 represents Penfolds’ powerful Cabernet Sauvignon house style, combining intensely flavoured fruit, new American oak maturation and multi-region South Australian sourcing.

First released in 1964, Bin 707 was created from Max Schubert’s ambition to produce a great Australian red wine with long-term ageing potential. The 1998 vintage is regarded as an outstanding South Australian year, delivering excellent fruit quality and a deeply structured, ageworthy Cabernet Sauvignon.

Vintage & Winemaking

The 1998 growing season began late after a cool spring, followed by very warm early summer conditions that brought on an early vintage. Fruit quality was excellent across South Australia, resulting in a concentrated and expressive release.

The wine was matured for 15 months in new American oak, giving structure and depth while supporting the opulent Cabernet fruit profile.

Critic Scores & Reviews

96 points - Jane Anson, Inside Bordeaux | Tasted: February 2024
Drinking Window: 2024-2042.

93 points - Wine Enthusiast | Issue Date: 1 March 2001
Described as full, dense and supple, with rich blackberry, cassis and black cherry flavours supported by fine-grained tannins.

Tasting Notes

Colour: Deep, dark red, almost opaque.

Nose: Concentrated crème de cassis and damson plum, with subtle floral notes, nutty oak and barrel-ferment complexity.

Palate: Opulent and flamboyant, showing blueberry, blackberry and dark Cabernet fruit without jamminess. Layers of flavour are supported by balanced oak and pronounced, ripe, chewy tannins, finishing long and powerful.

Food Pairing

Best suited to rich red meat dishes such as ribeye steak, braised beef, roast lamb, venison, slow-cooked short ribs and aged hard cheeses.

Cellaring Potential

This is a mature collector bottle with a Jane Anson drinking window extending to 2042. As with all mature fine wine, condition, provenance and storage history are especially important. Decant gently before serving.
